focaccia bread1
fresh mozzarella cheese, the kind that’s packaged as a globe
tomato2
fresh spinach
fresh basil (one big leaf will do)
Brianna’s French Vinaigrette salad dressing
ground black pepper
Cut a big slab-like slice of the mozzarella. Shred the basil. Drizzle the vinaigrette over the bread and then give it a good shake of the pepper. Assemble the rest as you like. Chow down.
Last year when Blue Baker ran this as a special, they added bacon, which is just not right. If they do it again, I shall visit my wrath upon them3.

2 The farmer’s market is on Wednesdays 4-7pm in the pavilion at Central Park, and Saturday mornings in the parking lot of the Health Department at William J. Bryan and Texas, across from the courthouse. Not that I’m biased toward homegrown tomatoes or anything. Some of the vendors sell basil plants as well, which is convenient.
